Grain bran hydrolysates in the production of fruit distillates

Currently, there is an urgent need for domestic fermentation activators based on low-cost secondary raw materials. We aimed to study the effect of microbial enzyme preparations with different action hydrolysis proteins and phytin grain bran obtain that could become alternative imported ones.
 studied wheat rye brans; cytolytic, proteolytic, phytase action; multi-enzyme compositions; hydrolysates. Firstly, we determined kinetic characteristics preparations. Secondly, evaluated their effectiveness in brans. Thirdly, developed compositions. Finally, concentration soluble forms phosphorus free amino acids hydrolysates.
 optimal temperature pH values The compositions contributed a high accumulation reducing substances, water-soluble protein, phosphorus. hydrolysates obtained under bran’s own enzymes was about 20% higher samples, compared samples. However, when using addition enzymes, 1.5 times hydrolysates, use conditions can double content available yeast, control. Our results be used further research into as source nitrogen nutrition yeast at stage fruit distillate production.
